Another new brewery? Yup!

The Daily Herald reports that Tonality Brewing is hoping to purchase a former fire station at 169 N. Seymour Ave. in downtown Mundelein. The village is putting together an incentive package to help with their planned purchase and renovation. An opening in summer or fall of 2022 is targeted.

The new brewery would be located blocks from Tighthead and Bosacki.

I will be taking a brief vacation during the following week. I may try to keep up to date on these articles. I may also refer everyone to my sort-of-a calendar app.

We are having an in-person lineup release to celebrate our 4 year anniversary in Villa Park. Our first lineup release since the pandemic started.
Four is an Imperial Stout aged in Weller bourbon barrels for 19 months with Dark Matter Coffee, Toasted Pecans, Vanilla, & Cocoa Nibs added. (12% ABV)
This bottle will be $25 + tax per 500mL bottle. Limit 1 per person.
The release will formally start at 10am at our Villa Park location on Friday, July 16th and we will start wrist-banding people roughly an hour beforehand. We have only 520 bottles total will be available for purchase. We are expecting a high amount of participants and will have four payment terminals to expedite the process. Please do not park in front of our neighbors establishments to minimize parking issues for them on Ardmore and Kenilworth. Please form a line North of Pioneer Garden & Feed on the Great Western Trail. We ask that you refrain from lining up prior to 6am. Our taproom will open at 10am for those who wait in line and have purchased FOUR and will open to the public at our regular 11am time. Our second special anniversary release this week is a new take on an old classic. Henna: Birthday is a German Chocolate Cake inspired Imperial Stout that is conditioned on Pecans, Coconut, Vanilla, & Cocoa Nibs. A thick, luxuriant body is met with all the the decadence of a fudgy chocolate cake covered in pecans and toasted coconut flakes. Join us in celebrating our 4th birthday with this absolutely delectable iteration of our original flagship stout! (14% ABV)
Triple Space Roots is a Triple Dry-Hopped, Triple India Pale Ale with a monolithic heap of Citra and Galaxy hops. Clocking in at 9.5%, we wanted to send this beer into deep space. Metagalactic notes of fresh peach and melon dance with an overflowing amount of citrus all carried on the back of an extraterrestrial haze. Not to mention, the ability to enjoy your beer in the 4th-dimension thanks to the temperature sensitive ink located on the MORE logo. (9.5% ABV)

A vibrant spark propels weighty yuzu and powdered Smarties candy on the nose — magnetic super watermelon, both juicy and charging. Remarkably bright with red berry-infused marmalade and seedy blueberry preserve in the sip. A mouthwatering acetobacter tinge draws a tingle on the back of your tongue in the close before a robust and memorable finish like a fat cab or zinfandel.
For those of you that may not be familiar with mixed culture fermentation, it is a deliberate process where we select a combination of unique yeasts and bacteria to work together in fermentation with the objective of creating something multidimensional and original. The process takes a lot of time in the arc of a traditional beer fermentation process. Where we might make an IPA with a turn time in as little as three weeks, a mixed ferm beer takes months and often years to fully develop and achieve our goal.
For Square Wave, our initial Dust Music release, we used French oak wine barrels and filled them with a white ale base and Illinois-grown aronia berries and fermented all of that goodness with a mixed culture of brettanomyces, lactobacillus, and pediococcus. The end result is something you need to experience for yourself, and after several years we could not be more thrilled that it’s going to be available for all of you this Friday.
Due to the meticulous nature of the Dust Music project, this will be an extremely limited release exclusively available at the brewery and the Chicago taproom starting Friday.
