We could wax eloquent all day about this incredible beer. The heavy grapefruit squish, the Pizza Port-esque resin, and enough pine soul for the true Northwoods in all of us here in the Midwest. This is Death By Viking, a 10% Imperial IPA, grounded in the tradition of SOB and our true symbol of the last stand of the once revered.
This was packaged beer number 003 in SOB lore and a bevy who’s hop presence we have always described as a ferocious onslaught. In the past this brew has broken our brewhouse, not metaphorically but in pure fucking truth with a grain bill too heavy for us to accomplish. Citra, Simcoe, and Chinook and enough heritage karma to blow the new school shit out of the water. This beer has always been designed to be an all out attack on your senses. And we are proud of that.
No pre-order. No noise. This beer is called Death By Viking because in the end you only get killed by one. This holiday, when your uncle says he likes craft slap this cylindrical axe in his palm and call his bluff. Trust us, you’ll have some stories. Friday at both shops and in your hearts all year. Naperville will have @gillersonsgrubbery from 4-8PM with an unforgettable menu we’ll drop later this week. This is DBV, get it while you can.

Dutch Shepherd Rye was a creation from our guest Homebrewer Clayton, he developed this Rye Beer with an assertive rye flavor, spiciness and sweetness, and a smooth malty finish. This brew is a product of our guest homebrewer program where Greg works to brew a small batch of a recipe with a local homebrewer. Then the beer is on tap in the brewery for all to enjoy!

In the first four years of Solemn Oath’s humble beginnings, we developed a few beers that have been part of a series we haven’t talked much about since: The Seven Seals.
On December 17th we will swerve for the release of a brand new experience of this series with The Scroll and the Lamb, an Imperial Stout with toasted coconut, cocoa nibs, and cinnamon brewed with Ricky Cervantes of Foreign Exchange Brewing Co. This is both important and symbolic.
When discussing a potential collaboration project, Ricky drove home how much inspiration he pulled from Conquest, our project with our friends at The Bruery. Ricky’s passion for every detail and his obsessive approach to making beer is inspiring to us, now nearly a decade in, and reminiscent of our beginnings and the feeling of unstoppable energy and the opportunity we had to collaborate in this series. He and his small team at Foreign Exchange are doing some incredible things and to weave him into The Seven Seals story only feels right.
The Scroll and the Lamb arrives at 13% ABV with appreciable depth of cocoa cast chocolate. It is thick. Very, very thick. And the considerable rye drives home a brown sugar sweet and spice, more like molasses than candy. The coconut speaks volumes like a Samoa cookie dipped back and forth, back and forth, back and forth between dark and melted fudge before you tell yourself it’s enough, go in for the bite, and then immediately decide to finish the whole box. The Madagascar Vanilla hits subtle with a cinnamon dab finish like a chocolate snickeredoodle.

THE 2021 VARIANTS
High West — aged once again in High West whiskey barrels, but this time in a combination of rye and bourbon, and these barrels were wet! Lots of barrel, vanilla, oak and whiskey notes and flavors to enjoy as you sip.
¡La Sorpresa! — Inspired by spicy, cinnamon-y Mexican hot chocolate, we load this variant with roasted cacao nibs, espresso powder, vanilla beans, toasted cassia cinnamon (sourced from our friends at Spice House), and ancho, New Mexico, and arbol chiles. A complex and unforgettably delicious beer with a picante finish! (This is the only variant we’ve produced all five years!)
Praline (NEW FOR 2021) — Caramel and pecan flavors mix with vanilla and the rich chocolate malt to create a most decadent liquid dessert.

Bad Santa will be available for a quick photo and please don’t be alarmed if you smell whiskey on his breath. He won’t be driving his sleigh home that evening.
